Red Beef and Rice Recipe

A hearty one-pot meal that combines ground beef, vegetables, and rice in a flavorful cajun-seasoned dish.

Ingredients

  • 2 tbsp oil or butter
  • 1 large white or onion, diced
  • 4 large bell peppers, diced
  • 4 celery stalks, diced
  • 4 cloves garlic, minced
  • 2 tbsp tomato paste
  • 1 cup chicken broth
  • 4 cups beef broth
  • 2 lbs ground beef
  • 2 tbsp cajun seasoning
  • 2 tbsp paprika
  • 3 cups of uncooked parboiled rice
  • 4 cans cream of mushroom soup
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 325°F
  2. In a dutch oven or large pot, preheat pan to medium heat
  3. Add oil and swish around the pan once warm
  4. Add onions, peppers, and celery and saute until onions are translucent and just turning golden, around 6 minutes
  5. Add garlic and cook until fragrant and just turning color, about 2 minutes
  6. Add tomato paste and cook for around 1 minute, stirring constantly
  7. Add beef and cook, crumbling as you cook, just until no pink remains
  8. Deglaze the pot with ¼ to ½ cup chicken stock
  9. Add remaining chicken stock, beef stock, cajun seasoning, paprika, and rice to the pot
  10. Bring the pot to a boil
  11. Cover pot and put into oven for 30 minutes (or until rice is cooked and liquid has evaporated)
  12. Remove from oven and rest pot with lid on for 10 minutes
  13. Remove lid and stir in soup
  14. Season with salt and pepper to taste
  15. Serve
