A hearty one-pot meal that combines ground beef, vegetables, and rice in a flavorful cajun-seasoned dish.
Ingredients
- 2 tbsp oil or butter
- 1 large white or onion, diced
- 4 large bell peppers, diced
- 4 celery stalks, diced
- 4 cloves garlic, minced
- 2 tbsp tomato paste
- 1 cup chicken broth
- 4 cups beef broth
- 2 lbs ground beef
- 2 tbsp cajun seasoning
- 2 tbsp paprika
- 3 cups of uncooked parboiled rice
- 4 cans cream of mushroom soup
- Salt and pepper to taste
Instructions
- Preheat oven to 325°F
- In a dutch oven or large pot, preheat pan to medium heat
- Add oil and swish around the pan once warm
- Add onions, peppers, and celery and saute until onions are translucent and just turning golden, around 6 minutes
- Add garlic and cook until fragrant and just turning color, about 2 minutes
- Add tomato paste and cook for around 1 minute, stirring constantly
- Add beef and cook, crumbling as you cook, just until no pink remains
- Deglaze the pot with ¼ to ½ cup chicken stock
- Add remaining chicken stock, beef stock, cajun seasoning, paprika, and rice to the pot
- Bring the pot to a boil
- Cover pot and put into oven for 30 minutes (or until rice is cooked and liquid has evaporated)
- Remove from oven and rest pot with lid on for 10 minutes
- Remove lid and stir in soup
- Season with salt and pepper to taste
- Serve
