Black Bean Soup Recipe

A hearty and flavorful black bean soup made with fresh vegetables and aromatic spices.

Ingredients

  • 4 15 oz cans black beans (with liquid)
  • 1 15 oz can kernel corn (with liquid)
  • 1 cup mild chunky salsa
  • ¼ bunch cilantro
  • ¼ seeded bell pepper
  • 2 cloves or 1 tbsp minced garlic
  • 1 tsp dried oregano
  • 2 tbsp lime juice
  • 1 tbsp ground dried cumin
  • Water (enough to equal six cups in blender)

Instructions

  1. In a 6 cup blender, add 2 cans of black beans (with liquid), salsa, cilantro, bell pepper, garlic, oregano, lime juice, cumin, and enough water to equal six cups
  2. Blend until combined
  3. In a large stockpot, add remaining 2 cans of black beans (with liquid) and corn (with liquid)
  4. Bring to a boil
  5. Add blended mixture and stir to combine
  6. Reduce to simmer and cook for 30 minutes
