A hearty and flavorful black bean soup made with fresh vegetables and aromatic spices.
Ingredients
- 4 15 oz cans black beans (with liquid)
- 1 15 oz can kernel corn (with liquid)
- 1 cup mild chunky salsa
- ¼ bunch cilantro
- ¼ seeded bell pepper
- 2 cloves or 1 tbsp minced garlic
- 1 tsp dried oregano
- 2 tbsp lime juice
- 1 tbsp ground dried cumin
- Water (enough to equal six cups in blender)
Instructions
- In a 6 cup blender, add 2 cans of black beans (with liquid), salsa, cilantro, bell pepper, garlic, oregano, lime juice, cumin, and enough water to equal six cups
- Blend until combined
- In a large stockpot, add remaining 2 cans of black beans (with liquid) and corn (with liquid)
- Bring to a boil
- Add blended mixture and stir to combine
- Reduce to simmer and cook for 30 minutes
