A hearty and flavorful chili made in the Instant Pot. Double the recipe for an 8 qt pot.
Ingredients
- 1 tbsp cooking oil
- 1 lb stew meat, chopped in bite-sized pieces with 4 tbsp taco meat seasoning OR 1 lb taco meat
- 1 15 oz can pinto beans
- 1 15 oz can kidney beans
- 1 28 oz can petite diced tomatoes
- 1 4 oz can green chiles (mild or spicy as preferred)
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 tbsp Drew's taco meat seasoning
- 4 tbsp chili powder
Instructions
- Set Instant Pot to sauté mode and heat cooking oil
- Add chopped onion and sauté until translucent, about 3-4 minutes
- Add minced garlic and cook for 1 minute until fragrant
- Add stew meat (if using raw meat) and brown on all sides
- Add taco meat seasoning, chili powder, and stir to combine
- Add diced tomatoes, green chiles, pinto beans, and kidney beans
- Stir to combine all ingredients
- Cancel sauté mode and secure the lid
- Set to pressure cook on high for 20 minutes with natural release for 10 minutes
- Quick release any remaining pressure and serve
