Instant Pot Chili Recipe

A hearty and flavorful chili made in the Instant Pot. Double the recipe for an 8 qt pot.

Ingredients

  • 1 tbsp cooking oil
  • 1 lb stew meat, chopped in bite-sized pieces with 4 tbsp taco meat seasoning OR 1 lb taco meat
  • 1 15 oz can pinto beans
  • 1 15 oz can kidney beans
  • 1 28 oz can petite diced tomatoes
  • 1 4 oz can green chiles (mild or spicy as preferred)
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 tbsp Drew's taco meat seasoning
  • 4 tbsp chili powder

Instructions

  1. Set Instant Pot to sauté mode and heat cooking oil
  2. Add chopped onion and sauté until translucent, about 3-4 minutes
  3. Add minced garlic and cook for 1 minute until fragrant
  4. Add stew meat (if using raw meat) and brown on all sides
  5. Add taco meat seasoning, chili powder, and stir to combine
  6. Add diced tomatoes, green chiles, pinto beans, and kidney beans
  7. Stir to combine all ingredients
  8. Cancel sauté mode and secure the lid
  9. Set to pressure cook on high for 20 minutes with natural release for 10 minutes
  10. Quick release any remaining pressure and serve
