Creamy and flavorful refried beans made with pinto beans, sofrito, and aromatic spices.
Ingredients
- 3 tbsp butter (or lard)
- 3 tbsp olive oil
- ½ large yellow onion, minced
- 4 medium cloves garlic, minced
- 2 15 oz cans pinto beans, drained (or ½ lb dry beans, cooked and drained)
- 1 tbsp prepared sofrito
- ¼ cup chicken broth
- ¼ tsp dried oregano
- ¼ tsp chipotle chile powder
- ¼ tsp ground dried cumin
- ½ tsp ground black pepper (or more to taste)
- ½ tsp salt (or more to taste)
Instructions
- In a wide saucepan, heat butter and oil over medium heat until it shimmers
- Fry minced onion until translucent and golden
- Add minced garlic and cook until just turning golden
- Add beans and cook for two minutes, stirring gently but constantly
- Add sofrito and cook for one minute
- Turn heat to low and add broth and all seasonings, stirring to mix
- Use a stick blender to blend to desired consistency; if needed, add more broth or water
- Add additional salt and pepper to taste
